Rooted in the unique tapestry of Creole culture, Chef Dominick Lee’s culinary journey pays heartfelt homage to his New Orleans heritage. After Hurricane Katrina in 2005, Lee’s passion for cooking led him to The Art Institute of Houston, where he received the inaugural “Underbelly Scholarship” from James Beard award-winning chef Chris Shepherd. His journey to his Bachelors in Culinary Management included roles as sous chef at Bay Oaks Country Club, Executive Sous Chef under James Beard semifinalist Chef Kiran Verma at Kiran’s and stages at some of the most highly acclaimed restaurants in the country, including Alinea (2 Michelin Stars), Next (1 Michelin Star), and Blue Hill at Stone Barns (2 Michelin Stars). At 29, Lee became one of the youngest executive chefs in Houston, taking the helm at Poitín Bar & Kitchen where he earned accolades such as Texas Monthly’s 2019 Best New Restaurants and a number of “Rising Star Chef” distinctions.

In 2021, Lee relocated to Europe to study Creole food derivatives and served as head chef at Villa Lena in Tuscany. About the Author:

Clint Smith is a staff writer at The Atlantic and the author of the poetry collection Counting Descent. The book won the 2017 Literary Award for Best Poetry Book from the Black Caucus of the American Library Association and was a finalist for an NAACP Image Award. He has received fellowships from New America, the Emerson Collective, the Art For Justice Fund, Cave Canem, and the National Science Foundation. His writing has been published in The New Yorker, The New York Times Magazine, Poetry Magazine, The Paris Review and elsewhere. Born and raised in New Orleans, he received his B.A. in English from Davidson College and his Ph.D. in Education from Harvard University.

Jeffrey Page is a native of Detroit, Michigan. He recently retired from The Awty International School where he taught History and Global Politics beginning in 2004. He has also served as an Adjunct Instructor of History at Texas Southern University and Houston Community College. In addition, he was an administrator at the Texas Department of Protective and Regulatory Services (Children's Protective Services), served as the Assistant Director of Children’s Division of the Mental Health Mental Retardation Authority of Harris County Texas, and has worked at Memorial Hermann Heights Hospital as a Medical Social Worker. He also worked as a Hospice Social Worker at the Hospice at the Texas Medical Center.

Since the nation’s founding, Black Americans have had a unique perspective on the U.S. experience—a “second sight”—that reveals the truth about the nation to itself. As renowned media scholar Sarah J. As Crownsville Hospital grew from an antebellum-style work camp to a tiny city sitting on 1,500 acres, the institution became a microcosm of America’s evolving battles over slavery, racial integration, and civil rights. During its peak years, the hospital’s wards were overflowing with almost 2,700 patients. By the end of the 20th-century, the asylum faded from view as prisons and jails became America’s new focus.
